Chelsea’s Sauce – Non-Spicy Garlic XO Sauce
Chelsea’s Sauce was created for my daughter, Chelsea, who loved the aroma of our chilli oil but couldn’t enjoy the heat.
So I made her something of her own — a non-spicy garlic XO sauce packed with the same deep savoury flavours: slow-fried garlic, dried scallop, dried prawn, shrimp paste and rich aromatics.
It has the bold umami depth of XO-style sauce, but without chilli heat, making it perfect for kids, families and anyone who loves big flavour without spice.
Spoon it over rice, eggs, noodles, dumplings, vegetables or grilled meats — it turns simple food into something deeply savoury, fragrant and addictive.
How to use
- Spoon over rice, noodles or fried rice
- Add to eggs, dumplings or wontons
- Stir into vegetables or tofu
- Pair with seafood, chicken or grilled meats
- Use as a non-spicy umami topping
