Fried Twin Eggs and Pan-Seared Sausage Topped with Soy Sauce (Classic Hong Kong 腸蛋飯)





This classic dish hails from the vibrant streets of Hong Kong, where simplicity meets flavor. It's a celebration of basic ingredients brought to life with soy sauce as the star. Effortless to prepare and immensely satisfying, it's the perfect quick meal with minimal ingredients required.


Ingredients:

  • Eggs (2 or even 3, taste better with 3 eggs)

  • Sausage (Chicken sausage recommended, or your favourite type)

  • Steamed rice

  • Spring Onion Oil (Optional)


How to Cook:

  1. Prepare Rice: Have your hot steamed rice ready on a plate.

  2. Cook Sausage: Heat a pan to medium, add a bit of oil, and cook the sausages. Aim for a slight browning but be careful not to burst them. Once cooked, place them atop the rice.

  3. Fry Eggs: Using the same pan (no need to wash), crack 2 or 3 eggs into the pan to fry. The goal is for the edges of the egg whites to crisp up a bit, while the yolks remain semi-runny. Once done, carefully place the eggs on top of the rice and sausage.

  4. Add Soy Sauce: Now, drizzle a generous amount of soy sauce over the dish. The soy sauce acts as the magic ingredient that ties all flavors together. For an extra touch, sprinkle some spring onion oil over the top.
